If German lemmy is any indication, usually there isn't more than one lemmy-instance per language (English being the obvious exception).

The most active communities on feddit.org are !europe@feddit.org and !buyfromeu@feddit.org , both English speaking
If you browse https://feddit.org/?dataType=Post&listingType=Local&sort=New, most posts are still in German.
French has two:
- !forumlibre@jlai.lu (all of the communities there are in French)
- !quebec@lemmy.ca (Quebec and french-speaking communities)
Indeed seem to be few to me too. But I wonder elsewhere, like a Japanese Piefed instance and a S. Korean Mastodon instance I found before.
https://bolha.one/ is a quite large Brazilian Mastodon server, and I know another Italian speaking Lemmy instance will be launched soon.
