Latest also means automatic major upgrades without doing the steps necessary for said upgrade, or breaking functionality/changes.

Having everything on latest seems a very bad idea.
It's a theorem. It's theoretical. This is like complaining about the 20 watermelon example being unrealistic: that's not what it is about.
