Github doesnt mean open source, as open source doesn't mean on github.
Lots of open source stuff not on github
Also a load of closed source stuff is on github.
Github or the variations like it just make it easy to look at code when publicly available.

Github is not what Thunderbird uses. They don't even use git. https://developer.thunderbird.net/thunderbird-development/building-thunderbird/windows-build-prerequisites
