Are there any fitness trackers available that don't gather data and send to the corporation? I loved my Fitbit, but then Google bought them. I'm looking to monitor heart rate and distance traveled at a minimum.

Garmin is your best bet. Sure they compile all of your data, but according to their policy, they don't share that with anyone else. You can also request that your data be deleted.

Your best bet is using an app that doesn't count to the internet

Sure, but I feel Garmin is the best bet amongst the ones that do. Atleast until they get bought or acquired by somebody else, god forbid.

Polar is excellent and has a robust personal data privacy policy.

I have a Suunto and I'm sure they don't sell my data to third parties.
