Do you guys think if the blade should have wheel & rail assembly on either side, like pull out drawers?

As long as the blade isn't able to create a turning moment as it comes down it'll work smoothly, but that could take some adjusting (as well as carefully planning the geometry of the short side of the blade). Also graphite inside the rails would help tremendously as seen in wooden drawers that work on wooden slides alone

You are of course completely wrong about that...There's also slicing off small pieces until you prove that none of those pieces were indeed cake.

A skilled operator could easily use it as a deli slicer. One could even use fancy blades for flare and variety.
