I’d like to imagine that the shells work in the same way absurdly large packaging works for things like a single SD card, by making the thing incredibly cumbersome to steal/eat.

i'd say all the fucked up looking creatures have always been and still are in the ocean, things on land just tend to be more normal because it's harder to survive on land.
