From my understanding hugging face is open source, but while they have lot of opensource work including clients to their website, I cannot for the life of me find the webserver's source code!

I think it is not. The models, clients, etc are open-source but the hosting backend itself doesn't have to be.
Similar to GiHub - a lot of open source projects are there, but you need enterprise license to host your own instance

Drat well that might make HPE AI Development Platform the only supported open source AI dev platform that I know of.
