I've setup Guacamole to access my home LAN and it works amazing. But, one feature of TV I'm trying to figure out is how I can install something on my parents computer (outside my LAN) that will allow me to connect without having to rely on port forwarding on remote end (what if my mom is travelling for example).

I considered setting up a VPN, but I don't feel the client should have constant access to my entire LAN at home.

Looking for suggestions how I could setup some sort of client setup on remote computer that works without port forwarding on remote computer. It would need to "call home" I suppose to update its remote IP and be able to connect regardless of remote firewalls, suggestions appreciated!

Can you clarify what you want to access from outside your lan? Is it just the guacamole server?
