This should be a feature in every phone. At least on Samsungs you can schedule reboots but it's not as convenient as putting everything in full lockdown automatically if the phone hasn't been unlocked in 24 hours.

I'd like to see more protections on that end, ie: auto-reboot if the SIM card is ejected, if not unlocked for X days, if network access is lost for X minutes, etc

I would want auto reboot if a code you set isn't entered and then a cable capable of data transfer is connected.

GrapheneOS reboots once a day as a security measure.

As long as you dont turn that feature off it does. You can set it to restart if the device hasn't been unlocked for between 10 mins and 3 days.
