Is there a website that shows a list of dead instances and how long they were alive and why they died? I think that would be a cool website. It could be for Lemmy, Kbin, Mastodon, and everywhere else in the Fediverse!

Something like Google Graveyard: https://killedbygoogle.com/ for everyone's reference.

i would expect something like that could be setup on https://fedidb.org/ with its current data

Can you stop just creating communities and actually moderate them instead? Anyone can manage to make them and they sure as hell don't need you to be the mod there when doing so.
