With one quick question to Google, I came out with two facts: about 3% of Australians are vegan (source) and Melbourne has 130 fully vegan eateries (source).
Now like I said: that was a single search, I don't know the accuracy of those facts. I'm also no expert on running a bar. But it sounds like she did try opening a business on hard mode.
