I'm not sure about my phone, maybe I'd like to keep Google Lens, but on a TV box it seems completely unnecessary. Its identifier com.google.android.googlequicksearchbox also sounds like it shouldn't contain anything important for the working of a device, but who knows with Google. Is there anything unexpected that would stop working when uninstalling / disabling updates for this?

You should check out https://github.com/Universal-Debloater-Alliance/universal-android-debloater-next-generation Tldr. removing some of these apps are not neccesary while some are, but doing it manually is a big no from me.

Some links won't open, Gemini won't work and the quick search will become limited or unusable. Other than that I don't remember anything important. That app is definitely worth disabling

I've had the Google app disabled on my phone for years. I haven't had any issues
